I cooked my breaded shrimp with an air fryer but they can also be cooked in the oven.
Delicious as finger food, appetizer, or as a main dish.
For breading my shrimp, I used a homemade breading: simple, light, and healthy with whole wheat breadcrumbs and made it stick with lemon juice.
Don’t forget to account for the breading in the total carbohydrate count of your meal.
No oil in cooking, add a drizzle just after baking.
The result is tasty and light: dry, crispy, and golden on the outside and soft and juicy on the inside.

Ingredients
- 12 shrimp
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)

Preparation
If the shrimp are frozen/thawed, wait until they are soft enough to clean easily without breaking.
Gently separate the heads from the bodies.Do not throw away the heads: set them aside as a base for a potential shrimp head broth or shrimp sauce.
Shell the shrimp.
Remove the black line, which is the intestine:
• with a sharp knife, make an incision along the back of the bodies;
• extract the black line, which is the intestine, using a toothpick.
Thoroughly wash the shelled and incised shrimp under running water, then let them drain in a colander.
Pat the remaining water with paper towels.Place the shrimp back in a colander.
Season with a pinch of salt, grind some pepper, drizzle with lemon juice [or, alternatively, orange juice] and turn them to season evenly.
Let them marinate for 15 minutes, then turn them again.
Let them marinate for another 15 minutes.
For a total of half an hour, at room temperature.In a plate, pour:
• whole wheat breadcrumbs;
• salt;
• pepper;
and mix.Coat the shrimp, one by one, in the breading, breading them evenly.
Follow the instructions [temperature and time] indicated in the manual of your appliance.
Procedure with the Ariete Air Fryer – Friggi Sano [Eurospin]:
• set the temperature to 320°F;
• preheat for 5 minutes;
• pour a drop of oil on a paper towel and oil the grill accessory;
• remove the basket, place the grill accessory inside and place the breaded shrimp on top without overlapping [6 breaded shrimp at a time];
• cook for 10 minutes;
• remove the basket, take out the breaded shrimp and, if necessary, proceed with the next cooking [re-oiling the grill accessory is not necessary].And if you don’t have an air fryer or simply prefer you can bake them in the oven.
Line a baking tray with parchment paper.
Place the breaded shrimp on the tray without overlapping.Briefly preheat the oven.
Bake at 330°F in a fan oven for 10-15 minutes until uniformly golden.Plate them.
Grind a bit more pepper, add chopped parsley, and drizzle with a little extra virgin olive oil.
Serve with lemon slices or orange slices.Your breaded shrimp with air fryer or oven are ready.
