Baked Chicken Breast and Peppers is a recipe I usually prepare, I must admit, when I have very little time to dedicate to cooking, and also not much motivation. Nevertheless, it is a main course that always satisfies both the palate and the stomach, because in its simplicity it is truly delicious. I also enrich it with raisins and pine nuts, because I find they go very well together, but if some of you do not like them, I assure you they are not necessary. A dish also very beautiful to bring to the table, because a touch of color never hurts. Additionally, it is delicious even when eaten cold, not just at room temperature, during the warm season.

Ingredients
- 1.5 lbs chicken breast cut into thick slices
- 21 oz bell peppers
- 1 clove garlic
- 4 tbsps bread crumbs
- to taste extra virgin olive oil
- to taste salt and pepper
- 2 tbsps raisins
- 1 tbsp pine nuts

Preparation
First, remove the chicken breast from the refrigerator at least 40 minutes before cooking to bring it to room temperature and avoid thermal shock when coming into contact with heat. Wash the bell pepper, dry it, and slice it into strips of various sizes. Pat the chicken breast with paper towels and cut the slices in half.
Place the chicken breast in a large bowl, add the bell pepper, garlic, 4 tablespoons of extra virgin olive oil, and season with salt.
Add the bread crumbs, raisins, and pine nuts, and mix all the ingredients well so they season evenly.
Grease a baking dish and arrange the chicken with the peppers inside. At this point, bake in a preheated oven at 350°F, using the fan mode, and cook for about 35 minutes, or until the surface is well golden. Do not exceed the cooking time, otherwise you risk drying everything out.
Serve our Baked Chicken Breast and Peppers immediately, very hot, but you can also enjoy it at room temperature or even cold, on the hottest days of the year.
Tip:
We can store the chicken breast with peppers in the refrigerator for a few days, but remember to put it in an airtight container.
If necessary, it can also be frozen, but make sure to do it inside the refrigerator and not at room temperature, to avoid the occurrence of unpleasant food poisoning, sometimes even very serious.
