Ingredients for the muffins

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 eggs (XL size)
  • 1/2 cup milk
  • 1/4 cup sunflower seed oil
  • 1 packet baking powder
  • 1 packet vanillin
  • 1 pinch fine salt

Preparation of simple muffins

  • In the bowl of the stand mixer (or in a regular bowl to use with electric beaters), pour the ingredients in this order: eggs, milk, oil, sugar, flour, baking powder, salt, and vanillin.

  • Insert the whisk into the stand mixer and set it to speed 4, letting it work for 4 minutes, then turn it off.

  • Lightly oil and flour 8 disposable muffin molds, fill them with the prepared batter using a spoon up to 3/4 of their capacity (about 2 tablespoons of batter for each liner).

  • Preheat the oven to 350°F and once at temperature, bake the muffins (to move them more easily, insert them in a baking tray) and bake for 25/30 minutes (always do the toothpick test), then take them out and let them cool before enjoying!

VARIATIONS

You can enrich the batter with 1/2 cup of chocolate chips or 1/2 cup of coconut flour or with 1 teaspoon of instant coffee or with 2/3 cup of toasted and chopped hazelnuts.

You can also soak them in a rum syrup once cooled (like babas) and enjoy them after a few hours in the fridge, you’ll taste how delicious they are!
