FARFALLE with TUNA and ZUCCHINI is a very quick dish to prepare with just a few ingredients. With its delicate and creamy flavor, it’s perfect for spring and summer when the temperatures start to rise but we don’t want to give up our beloved pasta. Ingredients
- 2 zucchini
- 8.5 oz canned tuna in oil
- 320 farfalle
- 1 shallot
- 0.85 cup cooking cream
- to taste extra virgin olive oil
- to taste salt

Steps
Place a pot of plenty of salted water on the stove and when it boils, add the farfalle.
Meanwhile, take two large zucchini, wash them, trim them, and grate them.
In a pan or wok, sauté the finely chopped shallot with a drizzle of extra virgin olive oil
Add the grated zucchini and cook with a lid for about 5 minutes, stirring halfway through
Add the tuna, mix, and cook with a lid for another 5 minutes.
Combine everything by adding the cream
Season with salt
Drain the pasta and toss it in the pan with the sauce
Serve immediately
For extra flavor, sprinkle with grated Parmesan cheese
