Regional Variations of Chicken with Peppers
Besides chicken breast, this recipe can also be made using other parts of the animal, such as thighs or drumsticks, depending on regional traditions.
First, coat the chicken slices in flour and shake off the excess.
Heat the extra virgin olive oil in a large pan with high edges and quickly brown the chicken scallops for a few minutes.
Meanwhile, clean the peppers and cut them into strips.
Once the scallops are browned, remove them from the pan and set aside.
Add the pepper strips and tomato sauce to the pan, salt, pepper, and cook for 10 minutes.
If you prefer, you can use halved cherry tomatoes to add more body to the cooking base.
When the peppers are cooked but still intact, add the chicken scallops, stir to flavor.
Deglaze with white wine allowing it to evaporate.
Finish cooking the chicken slices with peppers for another 10 minutes making sure the cooking base thickens.
Once cooked, sprinkle with fresh basil and serve.
Variants
If you want to make it richer, you can also sauté a clove of garlic or finely chopped onion in a pan before adding the peppers.
