I always add raisins and pine nuts because they pair very well with the peppers, but if you want, you can easily omit them because the goodness of this recipe will not change. Usually, sausages are not the epitome of a healthy diet, but not all of them are that bad. There are many available on the market, it just takes a bit of attention to find the right ones, as I did in this case. Nonetheless, it is good to avoid eating them often, but once in a while, you can make an exception.

Ingredients
- 4 large pork sausages
- 4 medium peppers
- as needed salt
- 1 tbsp raisins
- 1 tsp pine nuts
- 2 tbsp extra virgin olive oil

Preparation
Wash the peppers, dry them, cut them in half, remove the white parts with the seeds trying not to waste too much, and slice them into strips about 3/4 inch thick.
Place them in a non-stick pan along with two tablespoons of extra virgin olive oil, and cut the sausages into rings about 3/4 inch thick.
Initially cook them on low heat to soften, then increase the heat to brown them well. Meanwhile, adjust the salt and add the raisins with the pine nuts.
5 minutes before finishing cooking, when the peppers are almost done, add the sausages into the pan and let them sear.

Tips and Storage
You can store the sausages and peppers in the refrigerator for a few days, but always inside a glass or ceramic container.
If you want, you can also freeze them to keep them longer if you have leftovers. Place them in the freezer in single servings, very practical, and defrost them in the refrigerator or microwave.
