Ingredients

  • 5/8 cup water
  • 5.5 tbsp butter (in pieces)
  • 2 tbsp sugar (optional)
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 3 eggs (60 g each)
  • 2.1 cups milk (I used lactose-free)
  • 2 egg yolks
  • 2 tbsp all-purpose flour
  • 4 tbsp sugar
  • 1 packet vanillin
  • 1 tbsp unsweetened cocoa powder (for the chocolate version)
  • strawberries
  • maraschino cherries
  • powdered sugar

  • Piping Bag

Steps

  • Put water, butter, salt, and sugar in the mixing bowl, and cook for 5 min at 212°F speed 1

  • Add the flour and mix for 20 sec at speed 4

  • Remove the mixing bowl from its housing and let cool for 10 min.

  • Meanwhile, preheat the oven to 392°F and line the baking tray with parchment paper

  • Place the mixing bowl back, and with blades moving at speed 5, add the eggs one at a time through the lid hole

  • Mix again for 30 sec at speed 5

  • Transfer the dough into a piping bag and form the zeppole with two turns of dough each

  • Bake for 25 min until golden brown. Turn off the oven and leave the door ajar for 10 minutes.

    For this operation, use a wooden spoon between the door and the oven.

  • Put the milk, sugar, flour, eggs, and vanillin (or the unsweetened cocoa for the chocolate version) in the mixing bowl and cook for 7 min at 194°F speed 4

  • Pour the cream into a glass bowl, cover with plastic wrap and let cool

  • Put the cream in a piping bag and fill the zeppole cut in half.

  • Decorate with strawberries or maraschino cherries

  • Dust with powdered sugar before serving.

Storage and Tips

Store in the fridge covered by a cake dome.
