This recipe is simple and quick. Oyster mushrooms are sautéed in a pan with cherry tomatoes, garlic, and extra virgin olive oil.

Ingredients for Mediterranean Oyster Mushrooms in a Pan
- 1.76 lbs oyster mushrooms
- 2 cloves garlic
- 1 cup cherry tomatoes cherry tomatoes
- 2.5 oz Taggiasca olives
- 3 tbsps extra virgin olive oil
- 2 sprigs basil
- 2 pinches salt
- to taste black pepper
Preparation of Mediterranean Oyster Mushrooms
Never wash the mushrooms with water, instead clean them with a dry cloth or paper towel.
Remove the final part of the stem and cut the mushrooms into pieces.
Heat the extra virgin olive oil in a large pan and fry the sliced garlic cloves.
Add the mushrooms to the pan, salt and pepper (if you prefer, you can omit the pepper and add crushed chili pepper).
Mix with a spatula and as soon as they start to sizzle, add 3 tablespoons of water.
Cover with a lid and cook for about 6/7 minutes.
Meanwhile, cut the cherry tomatoes after washing and drying them.
We used a mix of date and cherry tomatoes.
Then remove the lid, add the cherry tomatoes and basil leaves.
Stir to infuse the flavor and let cook for another 6/7 minutes.
When everything is well cooked but the cherry tomatoes are not yet mushy, finish the preparation by adding the Taggiasca olives.
Stir for a few minutes to infuse the flavor.
You can serve the mushrooms either hot or at room temperature.
