With the Baked Fresh Fava Bean Pods, we can once again use the entire food product. This is one of my zero-waste recipes because what is discarded is only the fava’s stem. The taste is excellent, and with a few simple steps, you can create a truly special side dish. During the seasonal period for fava beans, I try to cook them in a thousand ways, but as I often tell you, I always try to use organic foods or those from the garden my husband tends!

Ingredients
- 1.3 lbs fresh fava beans
- 2 cloves Garlic
- to taste Extra virgin olive oil
- to taste salt and pepper
Tools
- Baking sheet
- Parchment paper
Preparation
Choose the freshest fava beans and pods that are not too large, otherwise the cooking time will be longer.
Wash them thoroughly, making sure to remove any dirt.
Dry them with a cloth or paper towel, and remove the stem.
Take the two garlic cloves, and cut them into fairly large pieces.
Lay a sheet of parchment paper on the baking sheet, and place the fava beans on it.
Distribute the garlic on top, and drizzle with extra virgin olive oil, making sure to use the right amount.
Season with salt and pepper to your taste, and bake in a preheated oven at 392°F (200°C) for about 20 minutes.
The temperature needs to be high because the cooking is very quick.
The pods should be well roasted.
Turn off the oven, and serve your Baked Fresh Fava Bean Pods hot, or if you prefer, at room temperature.
