Romanian Panettone with Chocolate and Pistachios
Today, a delicious version of the Romanian panettone (known as cozonac) made with two fillings, one of chocolate and one of pistachio, all covered with a layer of chocolate ganache and pistachio crumble. The Romanian panettone resembles brioche bread, so if you like brioche bread, try this sweet treat.

Ingredients for the Romanian Panettone with Chocolate and Pistachios:
- 1/4 cup milk
- 1 tablespoon sugar
- 1 oz fresh brewer's yeast
- 1/2 cup Manitoba flour
- The Starter
- 3/4 cup sugar
- 3 1/2 cups Manitoba flour
- 3 eggs
- 1/4 cup plain yogurt
- 1/2 cup butter
- vanilla
- lemon zest
- orange zest
- 7 oz pistachio cream
- 1 oz pistachio crumble
- 1 cup custard (Chocolate)

Mix the flour, sugar, yeast, and warm milk. Let it rest for about 30 minutes.

Dough preparation:
Mix the flour, sugar, starter, eggs, and yogurt
add some lemon zest, orange zest, and vanilla, knead for about 10 minutes, then knead by hand for a few more minutes.
Put the dough back into the mixer, add the cold butter, and knead until smooth and elastic. Form a ball, place it in a tall and narrow container, and let rise until doubled in volume.
After about an hour, take the dough and divide it into two equal parts. Roll out the first piece, spread pistachio cream on top.
Add the crumble and roll up. Seal the ends. Roll out the second piece.
Spread the cream on top and roll up. Seal the ends. Place the two rolls on top of each other and twist them.
Cover with plastic wrap and let rise for another hour. Then, brush with egg yolk and milk, and bake at 356°F for about an hour.
Once baked and well-cooled, cover with a layer of chocolate ganache. Add pistachio crumble on top. Let the chocolate harden well before cutting.
