  • 7.1 oz snow peas
  • 2 cloves garlic
  • 4 tablespoons dashi miso
  • 10.6 oz tofu (Soft Chinese tofu)
  • 10.6 oz noodles
  • 4 sheets nori seaweed
  • 1 hot chili pepper (Optional)
  • 1 pinch black pepper
  • A few slices fresh ginger

Steps

  • To prepare the vegan noodle soup, a healthy and tasty dish, I used only a few simple ingredients. I started with the sauté: I thinly sliced the snow peas, garlic, ginger, and chili pepper. The chili pepper is optional, add it only if you like it spicy.

  • To flavor the soup, I sautéed the snow peas, garlic, sliced ginger, and chili pepper in extra virgin olive oil for a few minutes, until softening the snow peas. If you prefer a milder flavor, you can grate the ginger so that its intense taste is not too pronounced.

  • Next, I added the miso paste and mixed it over low heat until it was completely melted and perfectly combined with the sautéed vegetables.

  • As soon as the miso melted and combined with the vegetables, I added water until all the ingredients were completely covered. Then I brought it to a boil and cooked for 5 minutes over high heat, preserving the crunchiness of the snow peas.

  • After cooking the snow peas for 5 minutes, I added the noodles and continued cooking for another 3-4 minutes, until reaching the desired consistency.

  • A minute or two before turning off the heat, I added the soft tofu and nori seaweed. I then mixed everything to soften the seaweed and season it with the broth, noodles, and other ingredients.

  • The vegan noodle soup is ready! Serve it hot and steaming. To your taste, you can add spices like parsley or chopped cilantro.

Suggestions:

If you don’t have rice noodles, you can use other types of noodles, such as soy or buckwheat noodles. You can add other vegetables to your liking, such as carrots, zucchinis, or mushrooms. For a more intense flavor, you can toast the noodles in a pan with a drizzle of olive oil before adding them to the soup. If you want to make the soup creamier, you can add a tablespoon of vegetable cream or coconut milk.
