Ingredients for Trofie Shrimp and Zucchini
- 10 oz trofie (or your preferred pasta)
- 2 zucchini (large or three medium)
- 1.1 lbs shrimp
- 1 clove garlic
- 1/4 cup white wine
- to taste extra virgin olive oil
- salt
- pepper

Steps for Trofie Shrimp and Zucchini
To prepare this recipe, start by washing and trimming the ends of the zucchini, then cut them into small pieces
Wash the shrimp and clean them by removing the heads and shells, and very importantly, remove the vein.
Cook them in a pan with oil and garlic for a couple of minutes, then add a splash of white wine and wait for it to evaporate.
At this point, remove the shrimp from the pan, leaving their juice inside, and cook the zucchini over medium-high heat.
Remove the garlic clove.
Finally, season with salt and pepper.
Once the zucchini are ready, add the shrimp back into the pan and mix.
Meanwhile, cook the pasta in salted boiling water.
Drain the pasta al dente.
(Keep half a glass of cooking water).
Sauté for a minute to blend the flavors well and finish with chopped parsley.
(If needed, add a little cooking water).
Enjoy your meal.
Tips
You can substitute shrimp with langoustines, prawns, and mantis shrimp if you prefer, or use different types of shellfish together.
The version with shrimp is more delicate than the others and generally pleases everyone.
If you are true lovers of seafood-based first courses, you can further enrich the recipe by adding clams or other shellfish.
You can also add cherry tomatoes to the zucchini and shrimp sauce, simply halved and added to the sauce near the end of cooking, as they shouldn’t soften too much.
If you love strong flavors, a pinch of chili pepper will make the difference. If you prefer spicy oil instead of fresh or powdered chili, add it at the end of cooking, directly to the plates.
