Homemade Sausages
As a child during the winter, I always saw my father buying pork and making sausages, capocollo, lard, and all these things. I remember they had a particular taste that I can’t describe. Today I wanted to recreate my father’s sausages recipe but since he is no longer with us, my mom explained the recipe to me. I must say I am very satisfied with the result ☺️ They don’t taste exactly like his but they are very good! If you enjoy having fun in the kitchen, try this recipe!

Ingredients for homemade sausages:
- 2 pork meat (60/70% lean 30/40% fat)
- 1.4 oz salt
- 0.7 oz paprika
- 0.7 oz salt
- 0.7 oz garlic
- 4 Casings (Meters)

After carefully choosing the meat (it must be 60/70% lean and 30/40% fat) we mince it. We add the seasonings: salt, pepper, paprika, garlic (I blended it to avoid finding pieces).
we mix well with our hands. We slip the casing onto the tube to make the sausages (to make it slide better you can grease it with a little oil) and shape the sausages. When they reach the desired size, we twist them. We continue like this until the mixture is finished. Once ready, you can cook them and enjoy them immediately or store them in the fridge for a few days or in the freezer for a few months!
