Pan-Fried Green Onions

Pan-fried green onions are a stewed side dish. For this quick recipe, you can use either white or red Tropea green onions (as I did). For an extra touch, try them au gratin, cook them sweet and sour, or season them with balsamic vinegar.

Pan-Fried Green Onions

  • 3 fresh green onions (white or red from Tropea – about 7 oz when purchased)
  • 1 tablespoon extra virgin olive oil (or peanut oil)
  • to taste salt (and herbs to taste – oregano, thyme, or nutmeg)

🍀for a sweet and sour version, add some sugar (brown sugar or maple syrup) during cooking

🍀for an extra touch, deglaze with white vinegar (or wine) during preparation, or season with balsamic vinegar towards the end of cooking

Pan-Fried Green Onions

  • How to clean green onions?

    To clean the green onions, wash them to remove any dirt, then cut off the beard below (the roots) and the top green part, but do not throw it away even if it’s tough! Discover some ideas below for a “no waste” kitchen.

  • Preparation

    Cut the washed green onions in half or quarters, depending on their thickness.

    In a suitably sized pan (to keep the green onions close and in a single layer), pour the oil, onion pieces, salt, and preferred aromas.

    Turn on the heat to medium flame and cover with a lid, turning as needed. Cook the vegetables for at least 15 minutes or until the desired doneness is reached.

  • VARIATIONS

    🍀 optionally, a dry bay leaf and/or a clove of garlic in its skin can be added

    🍀 deglaze with white wine (or vinegar)

    🍀 season with balsamic vinegar (or soy sauce)

    🍀 to make this side dish sweet and sour, add a tablespoon of sugar (or vegan honey) during cooking

    🍀 for au gratin green onions, add a tablespoon of breadcrumbs and brown all sides of the green onions well in the pan

    🍀 for a creamier (and less light) result, use butter instead of part or all of the oil

  • First, thoroughly wash the green onion stalks and remove the most damaged and hard top part. Here are some ideas for their use in the kitchen:

    🍀 slice them thinly, then make a soffritto with oil and garlic to use later as a base for soups, risottos, or stir-fried dishes

    🍀 the fresher green part can be added to salads, sliced in half and thinly sliced

    🍀 finely chopped stalks can be added to omelets, savory pies, or quiches

    🍀 sautéed in a pan, they can be added to pasta sauce for a touch of flavor

STORING pan-fried green onions

Pan-fried green onions can be stored in the refrigerator in an airtight container for up to 3 days. Reheat them gently on the stove or in the microwave before consuming.

Fresh green onions last in the refrigerator in the fruit and vegetable compartment for 10 – 12 days.
