Fresh Fruit Jellies with Agar Agar are very simple to make, quick, healthy, and most importantly, delicious. For all my gelatin-based recipes, I always use Agar Agar because it’s a natural product, specifically an algae. Everything you find as gelatin usually contains chemicals and pork derivatives. In other preparations, I also use cornstarch. This is a recipe you can prepare all year round, as you just need to replace strawberries with seasonal fruit, whatever you like best. As you can see from the photo, I’ve made some with pineapple and others with blueberries. You can really play around when making them, even creating particular flavors by mixing different foods.

Ingredients
- 2 cups strawberry juice
- 10 tablespoons whole cane sugar
- 8 grams of powdered Agar Agar

- 1 Chocolate mold
Preparation
Clean the strawberries by removing the stem and rinsing them thoroughly to remove any dirt under running water. If you have a juicer, your job will be much faster, but otherwise, you can blend them and strain to get the juice, which we’ll pour into a saucepan.
Add the necessary sugar, mix well, and place on medium heat, letting it cook for about 7 minutes. At this point, remove from the heat, add the agar agar, and mix well. Return to the heat and cook for about three minutes.
Turn off the heat and pour the mixture into the molds you have chosen to use. If you don’t have silicone molds, no problem. Even ice cube trays work just fine. Let it cool down slightly, cover with cling film, and refrigerate for at least 6 hours to set.
After this time, remove the jellies from the molds and place them on a tray or wherever you prefer.
Serve our Fresh Fruit Jellies with Agar Agar, maybe rolling them in granulated sugar or powdered sugar.
Advice and Storage
You can store them at room temperature, for a few days, in glass jars or in the refrigerator.
It is not advisable to freeze them as they would lose their consistency.
