The Stewed Salt Cod with Raisins and Pine Nuts is a recipe my grandmother often prepared during the winter season. Accompanied by slices of toasted bread, it could be considered a complete dish. Do you know the difference between Salt Cod and Stockfish? Salt Cod is a cod that is preserved in salt, while stockfish is preserved through smoking. Both, however, are ancient methods of processing and preservation.

Ingredients
- 2.2 lbs Desalted Salt Cod
- 28.2 oz Tomato Pulp
- 2 cloves Garlic
- 12 Small White Onions
- 4 Large Potatoes
- 1 tbsp Raisins
- 1 tbsp Pine Nuts
- 1 tbsp Oregano
- to taste Extra Virgin Olive Oil
Preparation
Chop the garlic cloves into small pieces, peel the potatoes and dice them. Let everything brown with 4-5 tablespoons of extra virgin olive oil. After about ten minutes, add the tomato pulp and small onions. Mix well, and if necessary, pour a glass of boiling water. Continue cooking for another ten minutes, covering the pan with a lid. At this point, add the salt cod fillets and oregano. Keep the lid on the saucepan, lower the heat, and let it cook for another twenty minutes. Turn off the heat and adjust with extra virgin olive oil. Salt will never be necessary since, even once desalted, the salt cod maintains a certain saltiness, which will still flavor the rest of the ingredients. Portion the fish, accompanying it with some slices of toasted bread. Serve piping hot. Tip: if desired, you can add a pinch of chili pepper.
