Shortbread Nuts Stuffed with Caramel and Peanuts

Very cute and at the same time very delicious treats, especially if you love caramel or peanuts. The shells are made with a shortbread, left to cool well then filled with a cream made with caramel and peanuts 😋. The nuts are ideal if we need to prepare a dessert buffet as we can organize ourselves well and start preparing already a few days in advance!

Ingredients for the nuts:

  • 2 g eggs
  • 1.67 cups flour
  • 3.53 tbsps butter
  • 1.58 tsps baking powder
  • 0.25 cups sugar
  • 0.75 cups sugar
  • 4.23 tbsps butter
  • 0.85 cups fresh cream
  • 8.82 oz mascarpone
  • 1.76 oz peanuts

Steps

  • Dough preparation:

    In a bowl, put the flour, baking powder, sugar, and mix. Add the eggs, softened butter,

  • Add a little vanilla, then mix and knead until you get a homogeneous dough. Weigh pieces of about 5g each and form balls.

  • Brush the mold with oil and place the balls inside. Close and cook for about 3 minutes then open

  • remove them. Continue like this until the dough is finished. Let the obtained shells cool well then with a knife gently remove any excess shortbread on the edges.

  • Filling preparation:

    Put the sugar in a pan and let it caramelize. When it is completely melted and reaches the desired color, add the butter and salt, and let it melt completely.

  • Add the cream while stirring. Once ready, transfer it to a container and add the chopped peanuts and mascarpone. Mix well.

  • Cover with plastic wrap and let it cool. Once cooled, fill the shells and pair them. Sprinkle the nuts with powdered sugar.
