Chicken Cacciatore

Classic recipe that doesn’t require too much effort to make. We’re talking about the timeless “chicken cacciatore” – a famous main course throughout the Italian peninsula.

The fact that it requires few ingredients is its strength, not to mention the infinite goodness you get with this culinary preparation.

You really need very little to make it at home too, you just need to get from the market the chicken (I chose thighs but other cuts are fine) and a mix for sauté thus carrots, celery, and onion. To give the final character, you should also add red wine and olives.

Ingredients

For chicken cacciatore

  • 2 chicken thighs, with skin
  • 4 stalks fresh celery
  • 3 carrots
  • 1 white onion
  • as needed extra virgin olive oil
  • 1 coffee cup red wine
  • as needed salt
  • leaves bay leaves
  • as needed green olives

Steps

For chicken cacciatore

  • First, dice the celery stalks

  • Proceed by cutting the carrots into strips and then into pieces

  • Similarly, chop the white onion and add it to the rest of the vegetables

  • Continue by heating the oil in a large saucepan and sauté all the pre-chopped vegetables for a few minutes

  • Then, add the red wine, salt, and let it absorb a bit more until the alcohol has completely evaporated

  • At this point, add the chicken along with the bay leaves, add more salt on top of the chicken, cover with a lid and let cook for about 20 minutes

  • Meanwhile, take the green olives and chop them into pieces, removing the pit

  • Return to the point, open the lid and turn the chicken, letting it cook for another 20 minutes with the lid

  • Finally, turn off the heat and transfer the portion to a plate along with the vegetable mixture

  • Lastly, garnish with the olives and serve

Tip!

If you prefer, you can add the olives directly while cooking, just 5 minutes before the end.
