Ingredients
- 2.2 lbs Potatoes
- 3 Large Red Onions (Vernina)
- to taste Salt and Pepper
- to taste Extra Virgin Olive Oil
Preparation
Peel the potatoes, slice them into not-too-thin rounds, and place them in a bowl. Peel the onions, slice them, and add them to the potatoes. In the meantime, preheat the oven to the maximum temperature. Season everything with extra virgin olive oil, salt, and pepper, and mix well. Pour the potatoes and onions into a baking dish and place in the oven. Cook at high temperature for just two minutes, then lower to 350°F and continue cooking for about 40 minutes. The cooking times vary depending on the type of oven; continue cooking until both the onions and potatoes are well browned. Turn off the oven, taste, and adjust salt and pepper if necessary.
