It truly is a symbol of Mediterranean culture thanks to the use of some iconic ingredients like tomato and extra virgin olive oil.

I treasure it in my childhood memories because my mother used to prepare it often for my snack using the typical white bread of the city of Palermo. She would alternate between “mafalda“, “semprefresco“, or “scaletta“, all types of bread from the artistry of bakers in the Sicilian capital.

Ingredients

For your bread and tomato

  • 1 white bread
  • 1 salad tomato
  • to taste extra virgin olive oil
  • to taste salt
  • to taste oregano

Tools

  • Knife
  • Cutting board

Steps

  • First, get a white or re-milled bread in the format you prefer, then cut it in half with a knife

  • Then season the 2 halves with extra virgin olive oil to taste

  • After that, slice a tomato into slices about 0.4 inches thick

  • Then place all the tomato slices on the first half of the bread

  • To finish, season with more oil, salt, and dried oregano

  • Finally, close the bread with the other half and serve

Tip!

If you like, you can also add some sliced cheese like primo sale, caciocavallo or tuma.
