Ingredients for the Side Dish of Cooked and Raw Vegetables
- 2 potatoes
- 2 zucchini
- 2 carrots
- 1 stalk celery
- 1 head lettuce
- 1.5 oz black olives (pitted)
- to taste basil
- 1 onion
- 1 oz sun-dried tomatoes in oil (or 2 oz of fresh cherry tomatoes)
- 2 pinches salt
- 3 tbsp extra virgin olive oil
Preparation of Side Dish of Cooked and Raw Vegetables
Start by peeling potatoes and carrots, trim the zucchini, then cut all the vegetables into fairly small and uniform pieces.
Cook potatoes and carrots together in a pot with plenty of unsalted water, after boiling, count 5 minutes then add the zucchini.
If you prefer, you can also cook them in the microwave, including the potatoes.
Before draining the vegetables, perform a test with the prongs of a fork; they should be well cooked.
Place the vegetables in a large salad bowl and let them cool.
Meanwhile, peel the onion and slice it thinly; if you want, you can soak it for a few minutes in water and vinegar to remove its strong taste.
Cut the celery into rings and the sun-dried tomatoes in oil into fairly small pieces; if you prefer, you can use fresh cherry tomatoes by halving them.
Finally, wash, dry, and cut the lettuce, then mix everything inside the salad bowl with the now-cooled cooked vegetables.
Add the whole or halved pitted olives, a few basil leaves, season with salt, and dress with extra virgin olive oil.
If you like, you can add freshly ground black pepper, dried oregano, or even powdered chili.
Do you want a meatless dish without tuna? Add some boiled eggs and it will be perfect.
Variations of Side Dish of Cooked and Raw Vegetables
If you want, you can also add 1 eggplant cooked in a pan in cubes, even without the peel.
Another tasty variation is the addition of a sliced cucumber or very thinly sliced radishes.
