Yogurt Cake with Rice Flour

The yogurt cake with rice flour is a simple snack or breakfast gluten-free dessert that can also be enjoyed filled for the sweet tooth. For the lactose-free version, simply replace the yogurt with lactose-free or plant-based yogurt. Yogurt is a milk derivative with a tangy flavor and creamy texture, produced by the inoculation of specific lactic ferments, Lactobacillus bulgaricus and Streptococcus thermophilus, responsible for the process of breaking down lactose into galactose and glucose. Any type of milk or even plant-based beverages like soy, almond, oat, and coconut can be used for yogurt production. Try making it at home by following my recipe.

Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 2 3/4 cups gluten-free rice flour
  • 1 tbsp gluten-free baking powder
  • 1/2 cup sunflower seed oil
  • 1 cup plain natural yogurt ((lactose-free with less than 0.01% lactose or plant-based))
  • to taste gluten-free powdered sugar

Tools

  • 1 Mixer Electric whisk or stand mixer
  • 1 Bowl
  • 1 Pan springform pan with 9-inch diameter

Procedure

  • Break the eggs into a bowl.

    Beat them with an electric whisk, when the mixture is foamy add the sugar.

    Continue working until you get a light and frothy mixture.

    Add the yogurt mixed with the oil and blend with the beaters.

    Add the flour in parts and the baking powder.

    Mix with the beaters to combine the mixture.

    Pour the mixture into a springform pan greased or oiled.

    Bake in the oven at 338°F for 30 minutes, do the toothpick test.

    Remove from the oven and let cool before removing from the mold and dusting with powdered sugar.
