Those who follow my blog know that I love quick and tasty appetizers, and this creamy ricotta mousse is perfect for spreading on crostini, grilled bruschetta, and even the ready-made chips we find in supermarkets.
You don’t need much for this recipe, but a good mixer certainly helps a lot to have an airy, creamy, and light ricotta mousse!
If we want to store the whipped ricotta cream, we can put it in airtight containers in the refrigerator and consume it within a couple of days, while if it has already been seasoned with herbs, it should be eaten within a day because aromatic herbs have the characteristic of deteriorating very quickly.
LAST BUT NOT LEAST: if you don’t like the fragrance of mint, you can replace it with basil!

Ingredients for WHIPPED AND SEASONED RICOTTA TARTINES
- 9 oz ricotta
- 1 tbsp mint (chopped)
- 1 tbsp chopped parsley
- 4 tsp honey
- 1/2 lemon (organic, zest only)
- 1 tbsp extra virgin olive oil
- to taste pepper
- to taste salt
- to taste sliced white bread

PREPARATION OF WHIPPED AND SEASONED RICOTTA TARTINES
I put the ricotta in a special bowl and use the whisks to make it creamy and as smooth and homogeneous as possible.
In a separate bowl, I put the chopped parsley and mint, adding honey and extra virgin olive oil as well, mixing everything well to develop all the flavors.
I also add the salt, grated zest of the organic or untreated lemon, and a pinch of black pepper to balance the taste, and I put everything on the whipped and very soft ricotta.
I can then serve by accompanying the soft ricotta mousse with crostini, grilled bread, hot and crispy slices of white bread quickly grilled on the stove!
