Gorgonzola Ice Cream with Apples Ingredients

  • 7 oz gorgonzola (sweet)
  • 1 cup milk (whole)
  • 1 cup fresh liquid cream
  • 1/2 cup sugar
  • 1 oz dextrose
  • 2 Golden Delicious apples
  • 2 tablespoons sugar
  • as needed honey
  • 1 tablespoon butter

Preparation of Gorgonzola Ice Cream with Apples

  • To prepare the Gorgonzola Ice Cream with Apples, first melt the gorgonzola with the milk in a saucepan over low heat.

  • Add the glucose, cream, and sugar and melt everything well for a few minutes then turn off the heat.

    Once the mixture has reached room temperature, place it in a bowl in the refrigerator for at least 12 hours.

  • Then pass it into the ice cream maker to churn, once finished you can place the ice cream in the freezer until ready to use.

    If you want, you can enjoy it creamy and fresh straight from the ice cream maker without the freezing step, so you’ll have a delicious and creamy scoopable ice cream.

  • Meanwhile, remove the core from the apples (you can peel them or not) then cut them into small cubes.

  • Melt the butter in a pan, then incorporate the apples and sugar and caramelize them for 5 or 6 minutes, stirring gently.

  • When serving the Gorgonzola ice cream with caramelized apples, place 2 generous spoonfuls of caramelized apples on the bottom of a plate.

  • Place one or two scoops of gorgonzola ice cream on top and sprinkle with honey.

How to Store Gorgonzola Ice Cream with Apples

You can store it in the freezer for 3 months and before serving let it rest out of the freezer for at least 15 minutes.

Variants

If you don’t like apples or it’s not their season, you can use pears in the same way.

If you prefer, you can replace the fruit with coarsely chopped walnuts.

You can omit the honey, but I assure you it goes great.
