Surely, it is ideal to bring to the table when you are in a hurry and have no ideas on what to prepare, as the procedure is not complicated and (excluding cooking times), allows you to serve lunch or dinner quickly.
Who doesn’t always have a pastry in the fridge, and now zucchini plays a role in every kitchen along with some eggs, a little chives if you like, and stracchino.
I chose stracchino, but you can change the type of cheese, for example, you can use provola or gorgonzola for a stronger flavor.

Ingredients for the Zucchini and Stracchino Pie
- 1 puff pastry
- 2 zucchinis
- 375 g stracchino
- 3 eggs
- 1/3 cup milk
- 70 g parmigiano
- to taste chives
- salt
- pepper
- to taste extra virgin olive oil
Tools
- Mandoline
- Baking Pan
- Bowl
- Whisk
Steps for the Zucchini and Stracchino Pie
Wash and dry the zucchinis.
Slice the zucchinis very thinly with the mandoline.
In a bowl, beat the eggs with salt, chives, grated cheese, and stracchino.
Add half a glass of milk and a pinch of pepper.
Mix very well with a hand whisk.
You should get a smooth and homogeneous mixture.
Unroll the pastry onto the baking pan (with its parchment paper. I used a rectangular one, but round is also fine). If using round, 26 cm diameter.
Prick the bottom with the tines of a fork.
Pour the egg and stracchino mixture, then place the sliced zucchinis over the entire surface.
Fold the edges of the puff pastry inward.
Sprinkle with grated cheese and a drizzle of extra virgin olive oil.
Bake in a preheated oven at 375°F in ventilated mode for 30/35 minutes until the zucchinis are well browned.
Ready to serve.
