Storage
Stuffed Grana cannoli can be kept empty for several days in an airtight container in the fridge. I recommend filling them just before serving.

You can leave the ricotta pure or flavor it with spices.
You can stuff the parmesan cannoli in different ways, for example with savory mousses.
You can enrich the ricotta with chopped ham, speck, other cheeses, parmesan, etc.
You can use any type of chopped nuts you have available or prefer.
You can use smaller cannoli molds to obtain mini cannoli. Obviously, you will have to use smaller portions of parmesan.
