- 1.1 lbs potatoes
- 1 lbs pumpkin
- 1 lbs sausage
- as needed extra virgin olive oil
- 2 cloves garlic
- as needed salt

HOW TO MAKE THE BAKED PUMPKIN WITH POTATOES AND SAUSAGE RECIPE
First, bring a pot of plenty of water to a boil on the stove, then peel the potatoes with a potato peeler, rinse them under running water, and cut them into pieces. Once the water boils, drop them into the pot and cook for about 4-5 minutes or until they are slightly cooked but firm.
Cool them under cold running water and let them drain.
Preheat the oven to 375°F, in “fan” mode.
Meanwhile, remove the skin from the pumpkin, then cut it into pieces more or less the size of the potatoes. Line a baking tray with parchment paper, add the potatoes, then the pumpkin and the garlic, season with salt and pepper, extra virgin olive oil, rosemary, and mix.
Cut the sausage into pieces and add it to the vegetables, trying to make only one layer: this way they will cook evenly. Finally, mix and bake in the hot oven for about 25-30 minutes (it depends on the size of the ingredients).
