Storage
You can prepare the pea and stracchino sauce and store it in the fridge for up to 2 days in an airtight container.
You can freeze the sauce and then use it later.
I advise against storing the already dressed pasta.
Tips
To prepare pasta with stracchino and peas, you can use, instead of stracchino, crescenza, certosa, or any fresh or soft cheese that you have available or like.
You can use both fresh and frozen peas.
You can enrich the peas and stracchino pasta by adding diced cold cuts of your choice, such as sautéed bacon, speck, cooked ham, raw ham, etc.
