Ingredients

  • 10.5 oz chicken breast (ground)
  • 1/2 cup potatoes, peeled, cooked, boiled
  • 1 egg
  • 1/2 cup parmigiano Reggiano DOP
  • to taste salt
  • to taste pepper
  • to taste lemon (grated zest)
  • 1 pinch nutmeg
  • 14 oz canned tomatoes
  • 4 tbsps extra virgin olive oil
  • 1/2 red onion
  • 1 sprig basil
  • to taste salt
  • to taste pepper
  • 1/2 liter peanut oil
  • to taste breadcrumbs

Tools

  • 1 Wok
  • 1 Saucepan
  • 1 Bowl
  • 1 Potato Masher
  • 1 Thermometer
  • 1 Food Mill

Steps

  • Mash the boiled potato well with a fork or in the potato masher inside a bowl.

    Add the meat and the rest of the ingredients for the meatballs. Mix well until a homogeneous mixture is obtained.

    Heat the oil in a wok to 338°F checking with a kitchen thermometer.

    In the meantime, form the meatballs and coat them in breadcrumbs. Fry them a few at a time until golden brown. Drain on absorbent paper.

    Chop the onion, place it in the saucepan with the oil and fry. Pass the canned tomatoes through the food mill and add them to the sauté.

    Adjust salt and pepper.

    As soon as it starts to boil, add the meatballs and basil.

    Cook for 15 minutes, if the sauce thickens too much add a few tablespoons of water and adjust the salt.

    Serve hot with fresh bread.

The boiled potatoes can be replaced with 100 g of bread soaked in milk.
