Ingredients for the pumpkin chocolate chip muffins:
- 3/4 cup pumpkin (Cooked)
- 2 eggs
- 1/4 cup butter
- 1/2 cup butter
- 1 1/2 cups flour
- 1/2 cup sugar
- lemon zest
- lemon flavoring
- vanilla
- Half packet baking powder
- chocolate chips
Steps
The preparation of the pumpkin chocolate chip muffins is very simple, watch the video HERE.
First, whisk the eggs with the sugar. Add the butter, cooked and pureed pumpkin, yogurt, and mix.
Add a bit of lemon and vanilla flavoring, grated lemon zest, the flour and the baking powder, then mix well.
Finally, add the chocolate chips and mix with a spatula. Put the obtained mixture into paper muffin cups. Add a bit more chocolate chips on top and bake at 350°F for about 30 minutes.
