HOW TO MAKE NUTELLA FILLED COOKIES
First, prepare and weigh all the ingredients, this will speed up the execution of the recipe for you.
Place the butter (cold from the fridge) cut into pieces and the sugar in the bowl of the stand mixer, attach the K-hook and start mixing. Add the egg and, once incorporated, add the flour, cocoa, baking powder and a pinch of salt. Continue mixing just enough to blend everything well.
At this stage, it is essential not to overwork the dough, otherwise, it will become tough and not crumbly.
Wrap the dough in plastic wrap and let it rest in the fridge for about 1 hour: this step is crucial because the gluten in the dough needs to rest and relax.
After the indicated time, preheat the oven to 356°F (static mode).
Then, roll out a sheet of parchment paper on the work surface and flour it (or work directly on a floured board).
Next, place the shortcrust dough and roll it out with the rolling pin to a thickness of about 4 – 5 mm. To achieve an even thickness, I placed spacers on the sides of the dough and then rolled it with the rolling pin.
If you see it tends to crumble, work it a little with your hands before rolling it out.
Next, cut the cookies with cutters and place them on baking sheets lined with parchment paper. I used a ravioli stamp, but round and fluted ones work too (or any cutters you prefer).
Using a teaspoon, place Nutella in the center of each cookie and then cover, making sure to seal the edges well. Bake the cookies in the preheated oven for about 13 – 15 minutes, until they are nicely golden. Finally, remove them from the oven, dust with powdered sugar and let cool.
