The soft English muffins buns are small fluffy buns that pair well with sweet and savory fillings and sauces and require a rising time.
Personally, I’ve tried them with both jam and cheese and mortadella, and I prefer the savory filling by far!
The circular molds for making these small buns are 2/2.5 inches, but I believe they can be made a bit larger just to avoid spending too much time in the kitchen, ahem!
In my opinion, the name muffin has nothing to do with what you’re actually eating: they are buns, period!
These English muffins, these soft buns are perfect for breakfast and family brunch!
In some recipes, I’ve read that they are initially cooked on a griddle and then finished in the oven… Sorry, but I did everything in the oven from the first minute of cooking!

- 8.1 oz flour
- 5.3 oz milk (lukewarm)
- 0.7 oz butter
- 0.1 oz dry yeast
- 0.4 oz sugar

FOR THE PREPARATION OF THE ENGLISH MUFFINS SOFT BUNS RECIPE
I dissolve both the sugar and yeast in the lukewarm milk, leaving to rest for about 15 minutes.
Meanwhile, in a small pot or microwave, I gently melt the butter.
In a bowl or stand mixer bowl, I mix the flour with the milk and other added ingredients, finally incorporating the melted and lukewarm butter.
I knead well with the hook or with my hands to obtain a fairly smooth and elastic dough.
Now I cover with plastic wrap and let the English muffins dough rise until it doubles in volume, about 2.5 to almost 3 hours for me.
After doubling, I roll out the dough to about 0.6 inches, and I SHOULD HAVE MADE IT THICKER!!!!!!!!
Anyway… I cut circles about 2.5 inches in diameter, place them on a baking sheet lined with parchment paper, and let them rise again for at least an hour.
After the second rise, I preheat the oven to 340°F in static mode, and when it’s nice and hot, I bake the soft buns English muffins for 6/7 minutes per side.
I let them cool a bit and serve them with cold cuts and cheeses or jams and sweet creams.
