  • 3 potatoes

HOW TO MAKE SEA BREAM FILLETS WITH POTATO CRUST

  • First of all, peel the potatoes, wash them, and grate them with a medium-large hole grater or with an electric vegetable chopper. Put the potatoes in a cloth and wring them to remove the water.

  • Pour the potatoes into a dish and season them with extra virgin olive oil, grated Parmesan and breadcrumbs, salt and pepper, mix well with your hands (or with a fork).

    Meanwhile, preheat the oven to 375°F, in “fan” mode.

  • Place the already cleaned and deboned sea bream fillets in a baking pan lined with parchment paper, salt them, and grease slightly. Cover the entire surface with the grated potato mixture, sprinkle with more grated Parmesan and breadcrumbs, rosemary needles and the grated zest of half a lemon, and bake in a preheated oven for about 10-12 minutes, then gratin until golden brown.
