Cod fillets are too good. A tasty and simple fish main course, perfect for a family lunch or dinner. You can also bake the fillets, but we know that frying is always the best!

A delicious and simple dish that can also be made with other types of fish, such as sea bass, swordfish, or sea bream fillets.

I mixed the breadcrumbs with sweet paprika, but you can also flavor it with chopped rosemary, basil, and oregano. Choose the aromatic herbs based on the season; thyme and parsley, for example, work very well too.

Those who do not have gluten intolerance can use classic breadcrumbs; the fillets will be delicious!

For those with gluten issues, you can use rice flour, a beaten egg, and rice flour breadcrumbs.

If you like it light and crispy, do a single coating, but if you prefer it softer and thicker, do a double coating: a real treat.

To accompany this recipe, we suggest making a nice green salad, light if prepared with a bit of lemon and oil, or alternatively a tomato salad, perfect for recalling the taste of the sea.

If you have little time available, you can prepare the fillets in advance; they keep in the fridge for a couple of days without losing their flavor.

Ingredients

  • 4 cod fillets
  • 2 eggs
  • to taste all-purpose flour (or oat or rice flour)
  • to taste breadcrumbs (or gluten-free or rice breadcrumbs)
  • salt
  • sweet paprika (optional)

Steps for Cod Fillets

  • Take each cod fillet and pat it dry with a paper towel to remove excess water.

    Using fish tweezers, remove any bones.
    Place breadcrumbs in one bowl, flour in another, and beat the eggs with salt in another.
    Flour the fish on both sides, then dip it first in the eggs and then in the breadcrumbs.

  • In a large pan, heat the oil and fry the fish until golden brown.


    Once removed from the pan, transfer it to a plate with paper towels.

    Add a pinch of salt only after cooking.

Tips

Want to try them baked? Cook them in a preheated static oven at 350°F for 20/25 minutes, depending on the size of the fillets, until golden.

Place the cod fillets in the air fryer (I use the special grill accessory, but you can simply place them in the standard basket), lightly spray them with a bit of extra virgin olive oil on both sides, and set the fryer to 350°F for 10 minutes, turning the fish halfway through. If needed, extend the cooking time by a couple of minutes: the breaded cod hearts should be nicely golden on both sides.

After preparation, if any fillets are left over, they can be stored in the refrigerator for a couple of days. They are excellent at room temperature.

If you use thin fish fillets, a second coating is mandatory; otherwise, they will curl up during cooking.
