Ingredients for Golden and Crispy Seasoned Potatoes
To prepare Parmesan Potatoes, choose new potatoes or small potatoes all of the same size
- 1.7 lbs new potatoes
- 3.5 oz grated parmesan cheese
- 1/4 cup extra virgin olive oil
- 1 clove garlic
- to taste salt
- 1 tsp oregano (preferably fresh)
- 1 tsp paprika (smoked or sweet as desired)
- to taste parsley (fresh, chopped)
Preparation of Golden and Crispy Seasoned Potatoes
To prepare the Parmesan Potatoes, finely chop the aromatic herbs and the garlic clove.
Line a baking sheet with wet and squeezed parchment paper and spread the extra virgin olive oil with a kitchen brush.
In a bowl, mix the grated parmesan with the aromatic herbs, salt, and paprika.
Wash the potatoes very well with the skin, scrubbing them well with a brush, then cut them in half lengthwise.
With a small knife, make cuts (from the cut side of the potatoes) without reaching the skin to form a grid.
Spread the seasoned parmesan with the herbs evenly in the baking sheet and arrange the potatoes with the cut side down.
Drizzle with a little more extra virgin olive oil.
Bake the Parmesan Potatoes in a preheated oven at 392°F in static mode and cook for at least 30/35 minutes.
Do the toothpick test to check if they are cooked before taking them out of the oven.
You can prepare the Golden and Crispy Seasoned Potatoes as explained above, and once the grid cuts are made, boil them in unsalted water.
Cook them for 6 minutes then remove them, dry them with a cloth, and place them in the sheet over the parmesan.
Cook them in a preheated oven at 392°F in static mode for 20 minutes, checking the degree of cooking and browning.
The smaller the potatoes, the faster they will cook.
If you have a microwave with a crisp plate or with the combined microwave + grill function, proceed as described above without pre-cooking the potatoes.
Oil the crisp plate or tray (depending on the microwave models) and spread the parmesan and aromatic herb mixture over it.
Place the potatoes with the cut side down and cook in crisp mode for 15 minutes, turn the potatoes and cook a few more minutes.

You can keep them in the fridge well covered with plastic wrap for 2 days and reheat them in a pan before enjoying them.
