BAKING: static oven at 356°F for about 35 minutes.

  • 1/2 cup sugar
  • 3 1/2 tbsps peanut oil (or rice oil)
  • 1/2 cup peanut butter
  • 2/3 cup oat milk (or cow milk – at room temperature)
  • 1 3/4 cups all-purpose flour
  • Half packet baking powder
  • 1 pinch fine salt
  • 7 oz whipping cream
  • 1 tsp powdered sugar (can be omitted)

  • PREPARE THE INGREDIENTS

    Place all ingredients at room temperature. Melt the peanut butter in the vegetable oil, mixing well. Weigh and sift the flour with the baking powder and a pinch of salt.

    Butter and flour the 8-inch pan.

    PROCEDURE

    With the electric whisk (or stand mixer), beat the eggs with the sugar until they are frothy.

    Then add the peanut butter melted in the oil and continue to mix the batter

    Incorporate the milk (cow or plant-based) and finally lower the speed of the whisk and add the sifted flour with the baking powder by spoonfuls.

    Pour the batter into the buttered and floured pan (or lined with parchment paper).

    Bake in a preheated static oven at 356°F for about 35 minutes, always check with a toothpick. Once cooked, leave it inside the turned-off oven for another 10 minutes to stabilize.

    Place the cold cream in a cold bowl (put it in the fridge at least 1 hour before preparation), sift the powdered sugar over it. Start whipping the cream at low speed then move to maximum speed, stopping before it turns into butter.

    Mix cream cheese (like mascarpone, robiola, quark, or other spreadable cheese) with peanut butter, if necessary add a little milk.

    – 1/2 cup of powdered sugar

    – 1/4 cup of softened butter

    – 1 cup of whipped cream

    In a large bowl, mix peanut butter, powdered sugar, and softened butter until smooth and homogenous.

    Separately whip the cream and gently fold it in, with movements from top to bottom, to maintain a soft texture.

STORAGE

The peanut butter cake not filled can be kept (at room temperature and away from air) for a week, but it tends to dry out over time. Alternatively, it can be frozen wrapped in plastic wrap.

Once it has been filled, it should be stored in the fridge and consumed within a maximum of 3 days.
