This is a classic “clean-out-the-fridge” dish because before making it, I had no idea what to prepare for lunch. The beauty of these recipes is that the result is a bit of a surprise, and you don’t have a preconceived notion of what might come out. It’s clear that often you can make mistakes, but I believe that if you have a basic understanding of cooking, the likelihood of failure is really low.
I wanted to call it capricious pasta because it slightly reminded me of the namesake pizza since I used ingredients like mushrooms and black olives. Besides those, I added garlic and sun-dried tomatoes, deglazing with some white wine, and finally garnished the dish with canned tuna.
I must confess that the result was excellent, even if I may seem biased, but you just need to try it yourself and see how pleasant it is to enjoy this Mediterranean-flavored pasta dish.

Ingredients
For capricious pasta
- 1 clove garlic
- 5 sun-dried tomatoes in oil
- as needed extra virgin olive oil
- 1 handful of pitted black olives
- 1 package champignon mushrooms
- as needed salt
- 1/2 cup white wine
- as needed parsley
- 1 can of tuna
- 200 g pasta

Steps
To make capricious pasta
First, peel the garlic clove and slice it finely with a knife
Continue by cutting the sun-dried tomatoes into strips and slicing the pitted black olives into rings
Next, heat the olive oil in a pan, then sauté the garlic in it for a few minutes
Then add the sun-dried tomatoes, mushrooms drained of their water, and the black olives
Continue by adding the salt and deglaze with the white wine, allowing the alcohol to evaporate. At this stage, you can also add some chopped parsley and let it cook for a few minutes
At this point, cook the pasta in salted water for the time indicated on the package. Set aside a glass of cooking water before draining it
To finish, bring the drained pasta to the same pan as the sauce and cook for a few minutes, adding the reserved cooking water. Wait until the water is absorbed and a creamy sauce forms
Finally, place the pasta on a plate, garnish with the sauce and tuna, serve, and enjoy this fantastic moment
Tip!
Of course, you can also use fresh mushrooms, but be careful, they will release a lot of liquid during cooking, so adjust accordingly.
