Ingredients – Winter Fennel Tzatziki

It can be made with or without garlic, according to your taste.

You can add capers or chopped olives.

  • 3/4 cup fennel
  • 1/2 cup Greek yogurt (or quark, sour cream, and/or ricotta cheese)
  • to taste salt (I use salt with wild garlic)
  • to taste herbs (dill tips, onion powder, chives, fennel, marjoram, oregano, parsley, mint, savory, thyme)
  • 1/2 tsp garlic (optional)
  • to taste lemon juice (or other citrus like orange, grapefruit)
  • 1 tbsp extra virgin olive oil (or rice oil)

Winter Tzatziki – Fennel Sauce

  • Wash the fennel and cut it into chunks (both the white “bulb” part and the green stalks can be used) into a chopper bowl, then chop finely.

    Pour the chopped fennel into a bowl, add the Greek yogurt, minced garlic (if desired), salt, preferred herbs, lemon juice (or orange), and finally a good oil.

    Mix everything with a teaspoon.

    Let the winter tzatziki marinate in the refrigerator for at least half an hour before serving.
