Vegetarian Gastronomic Panettone Fillings
For those intolerant to gluten, choose a gluten-free and lactose-free savory panettone.
For those who love organic products, choose a organic gastronomic panettone of 500 grams.

- 3/4 cup chickpea flour
- 3/4 cup water
- 2 tablespoons extra virgin olive oil
- to taste fine salt
- 3/4 cup artichokes in oil

- 1/2 cup potatoes
- 1/2 cup frozen peas
- 1/3 cup carrots
- 1/3 cup mayonnaise (veg for vegans)
- 2 tablespoons radicchio (raw or cooked)
- to taste fine salt
- 1/4 cup potatoes

- 1/2 cup spreadable cheese (veg for vegans)

Vegetarian Gastronomic Panettone
To cook two chickpea pancakes in a pan, follow this recipe. Alternatively, you can prepare thin omelets.
For the cooked vegetables (5 oz of potatoes, 3 oz of frozen peas, 2.5 oz of carrots). Peel and dice the potatoes and carrots into small, regular cubes. Bring water to a boil, then salt and immerse the vegetable cubes and frozen peas. Cook for about 5 minutes or until the desired doneness is reached. Drain the vegetables and let them cool.
FIRST filling
Place 3/4 cup artichokes in a food chopper with one tablespoon of oil to make a paté.
Spread the artichoke sauce on the first disk of savory panettone and place a chickpea pancake (prepared previously) on top.
Place two disks of savory panettone on the filling.
SECOND filling
Place about 7 oz of mixed cooked vegetables (potatoes, carrots, and peas) in a bowl and season with 1/3 cup of mayonnaise.
Spread the Russian salad on the third disk of savory panettone.

THIRD filling
Wash and slice the red radicchio into strips, optionally sauté it lightly in a pan or keep it raw.
Place a chickpea pancake (prepared previously) and the seasoned radicchio on the fifth disk of savory panettone.

FOURTH filling
Cover the seventh disk with spreadable cheese, add about 3 oz of mixed cooked vegetables (potatoes, carrots, and peas), and finish with fresh lettuce (or arugula).

To facilitate the process, first, recommend inserting long skewers (as many as the slices you want to make) into the panettone from the top (dome) to the base. Then cut the sormonté vertically and evenly, one slice for each skewer.
