Baked Chicken Nuggets

The baked chicken nuggets are delicious chicken bites wrapped in a crispy coating made of corn flakes and baked in the oven. To avoid the use of eggs, I marinated them in cream along with lemon zest and herbs. If you don’t have cream, you can use milk, even plant-based, so according to your dietary needs, you can enjoy these delightful chicken bites. They are also suitable to prepare together with your children.

Ingredients

  • 2.2 lbs chicken breast
  • 1 lemon
  • 1 cup heavy cream
  • herbs
  • salt
  • pepper
  • corn flakes

Steps

  • Cut the chicken breast into bites not too large, about 0.8×0.8 inches. Pour the cream into a bowl and add the herbs. Also add the chicken, salt, and pepper, then mix well. Cover with plastic wrap and let it rest for 1 hour in the fridge.

    Meanwhile, put the corn flakes inside a plastic food bag. Close the bag and roll over it with a rolling pin to reduce them to crumbs. Place the corn flakes on a plate and coat each chicken bite on all sides. Arrange the chicken nuggets on a baking tray lined with parchment paper.

    Oil the bites well; alternatively, you can use a spray bottle. Bake at 392°F (200°C) for about 30 minutes. Halfway through cooking, turn them to the other side. Continue cooking until they are golden brown. Remove from the oven and enjoy with sauces of your choice.

Advice

Cream can be replaced with milk or unsweetened plant-based beverage in the same amount. Alternatively, you can also use 3 eggs.
