I used a mixed pasta format ‘Le Insalatonde’ from the union of 4 different pasta varieties, but penne, farfalle are just fine, use the pasta format you love most.
As for vegetables, there was plenty of choice at the market this morning. I took some spring onions, a few peppers, zucchini, a nice bunch of cherry tomatoes, and eggplants.
I used the basil that I have on my terrace, and you have to believe me, it smells amazing.
You’ll see what a beautiful and fragrant dish, and your taste buds will quickly make it one of your favorite dishes, and if you serve it when you have guests, you’ll see what a great success; you will surely be showered with compliments, and the request for seconds will not be delayed!

Ingredients for Pasta alla Farmer’s Market
- 11 oz pasta (fusilli, macaroni, or other)
- 2 bell peppers (1 red, 1 yellow)
- 2 zucchini (small or 1 large)
- 1 eggplant (medium)
- 1 spring onion
- 1 bunch basil
- to taste cherry tomatoes
- to taste extra virgin olive oil
- salt
- pepper

Steps for Pasta alla Farmer’s Market
Chop the spring onion and let it wilt in a pan with the oil and a chili pepper.
Wash, clean the eggplant and zucchini and clean the pepper by removing the seeds and filaments. Then cut all the vegetables into pieces of the same size.
Put the vegetables in the pan and sauté over high heat for a couple of minutes.
Adding a bit of pasta cooking water as needed.
Cook for the first few moments with the lid on and then without, making sure the vegetables cook while still remaining crunchy.
They should not be too soft.
Add two cherry tomatoes cut into wedges.
Add some basil leaves, adjust with salt, and mix.
Drain the pasta al dente and place it directly in the pan with the sauce, mix well and sauté over high heat for a few moments.
Now the Pasta alla Farmer’s Market is ready to be served and enjoyed hot or cold.
Add fresh basil, serve, and enjoy!

Let your imagination run wild and use all the seasonal vegetables you like most in this pasta! And to give a more intense flavor, add some capers to enhance it!
As for the type of pasta, I prefer Le Insalatonde, but if you wish, you can also choose other formats; this recipe pairs well with types of pasta like fusilli, rigatoni, paccheri, or mezze maniche rigate, or farfalle.
Storage
If you don’t eat it all at once, you can store it in the fridge in an airtight container for up to 2 days.
Freezing is not recommended.
