Pasta with Bell Pepper Cream and Tuma Cheese

Have you ever tried to invent something to eat based on what you have at home? You spend time thinking, opening and closing the fridge continuously, unable to find anything, when all of a sudden you find the solution! At some point, your eyes land on a bell pepper and a cheese, and that’s where you visualize a pasta dish that promises to be really good in terms of taste and combination.

In fact, in this recipe, I propose an easy-to-make main course that requires little time and few ingredients to create a nice lunch at home without having to deal with complicated procedures. The bell pepper takes center stage here, but it is accompanied by a very unique and pleasant tuma cheese.

Ingredients

For the pasta with bell pepper cream and tuma cheese

  • 1 bell pepper
  • 1 red onion
  • as needed extra virgin olive oil
  • as needed salt
  • 1/2 coffee cup white wine
  • 1 glass water
  • 1 teaspoon triple tomato paste
  • 1 teaspoon sugar
  • as needed tuma cheese
  • 7 oz pasta

Steps

To make the pasta with bell pepper cream and tuma cheese

  • Begin by rinsing the bell pepper under running water, then cut it into pieces, removing the seeds

  • Next, dice the onion and sauté it in a saucepan with extra virgin olive oil

  • Continue by adding the chopped bell pepper and sauté for a few minutes, then add salt

  • At this point, deglaze with white wine and wait a bit for the alcohol to evaporate and then add water, cooking for about 25 minutes with a lid over medium flame

  • After the time has elapsed, remove the lid and add the triple tomato paste, then mix everything until all ingredients are combined and finally add the sugar

  • At this point, turn off the heat and place all the seasoning in a beaker to blend everything with an immersion blender or a mixer

  • Once you have obtained the bell pepper cream, place it back into the same previously used saucepan and in the meantime, cook the pasta in salted water

  • When the pasta is cooked, drain it and add it to the saucepan with the bell pepper cream

  • To finish, mix the pasta with the seasoning for a few minutes with the flame on and finally plate

  • Lastly, garnish the pasta dish by grating tuma cheese over it in the quantity you prefer

Tip!

If you cannot find tuma cheese, you can also use other types of cheese like Grana Padano or Parmesan.
