The beef in Guinness is a slow-cooked meat stew in beer. Ingredients
- 2.2 lbs beef (shin, chuck)
- 2 carrots
- 1 clove garlic
- 1 onion
- 2 cups Guinness beer
- 2 cups vegetable broth
- 1 teaspoon tomato paste
- 1 leaf bay
- 2 sprigs thyme
- salt
- pepper
- 1/3 cup flour
- 1/4 cup extra virgin olive oil
- 1/4 cup butter

Steps
Cut the meat into cubes and lightly flour it, then set aside.
Heat the oil with the butter in a pot, preferably cast iron.Finely chop the onion and put it in the pot.
Add the thyme, bay leaf, and garlic.Let it brown for 5 minutes over low heat.
Add the meat and adjust with salt and pepper.Also add the tomato paste.
Let it flavor for 5 minutes, stirring often.
Moisten with the beer and after 10 minutes add the broth.Cover with a lid and cook on low flame for about 60 minutes.
Add the carrots cut into small cubes and cook for another 30 minutes.
Serve hot with some soda bread.
Tips
It can be stored for 3-4 days in the refrigerator.
Some variations include the addition of potatoes.
