- 1 lb veal (ground)
- 1 egg
- 2 tbsp breadcrumbs
- 1 sprig chopped parsley
- 4 oz cheeses (mixed: I used mozzarella ovoline, scamorza, raspadura)
- 1 pepper (grilled)
- 15 cherry tomatoes
- 4.5 oz spinach, cooked, boiled
- 2 sprigs rosemary
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

FOR THE PREPARATION OF THE VEAL SWIRLS WITH SPINACH AND PEPPERS RECIPE
I put the ground veal meat in a bowl, add the egg, chopped parsley, breadcrumbs, salt and pepper.
Mix well to combine everything, then spread this mix on a sheet of parchment paper, leveling it to a thickness of just over half an inch.
Add the boiled spinach
and the chosen cheese mix,
and the grilled pepper cut into strips.
Now roll it up tightly like a candy with the parchment paper
and then again with aluminum foil.
Take a baking dish, place extra virgin olive oil and a glass of water (or broth or wine or a mix of everything) on the bottom, arrange the meat roll and bake at 400°F for about 30/35 minutes, checking and turning the stuffed ground meat swirl for even cooking.
Compose the dish with the veal swirl with spinach, cheese, and pepper and serve immediately for tasting!

AnnalisaAfter this cooking time, unwrap everything and let it cool completely.
Cut the stuffed veal swirl into slices of 1/1.5 cm and arrange them without overlapping in the baking dish, add a splash of EVO oil and let them finish cooking for another 10 minutes approximately.
In the meantime, if I want sauteed cherry tomatoes as a side dish, I wash and cut the tomatoes as desired and, over medium-high heat in a pan, I let them soften by quickly and frequently tossing the preparation.
