Ingredients for 1 cup of chia seed pudding with yogurt and strawberries

If you are celiac, chia seeds are naturally gluten-free and do not need the label “gluten-free” as long as they are not mixed with other ingredients.

  • 1/2 cup low-fat yogurt (or plant-based yogurt)
  • 1 cup strawberries
  • A few drops maple syrup

How to prepare overnight chia pudding with yogurt and strawberries

  • To prepare the chia pudding with yogurt and strawberries, start the night before: to achieve the right consistency, the chia seeds must rest overnight. In a glass container, mix the low-fat yogurt and the chia seeds (1). Cover the container and place it in the refrigerator. The next morning, the seeds will have absorbed the liquid, creating a sort of dense pudding (2). Wash the strawberries, dry them, remove the stem, and cut them into pieces (3).

It is better to store the chia pudding with yogurt (which keeps in the fridge for 2 days) and the chopped strawberries separately.

Tips and Variations

If you prefer, instead of pouring maple syrup over the strawberries, you can sweeten the pudding by adding the syrup to the yogurt the night before and mixing well. If you don’t like maple syrup, you can replace it with honey or agave syrup.
