The apple and orange cake is a simple dessert for snack or breakfast. Made without milk and butter, light and fluffy, it will please your whole family. A cake made with just a few simple ingredients you have in your pantry: eggs, flour, sugar, and olive oil. For the oranges, I recommend using untreated ones so you can also use the grated zest. This apple and orange cake keeps very well for 3-4 days, staying soft and fragrant. I also recommend the apple cake with oil, simple and light, while the more gluttonous ones can try the apple cake with mascarpone.

Ingredients

  • 4 eggs
  • 3/4 cup sugar
  • 1/2 cup extra virgin olive oil
  • 2/3 cup orange juice
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 apple
  • 1 orange
  • 1 lemon

Tools

  • 2 Bowls
  • 1 Knife
  • 1 Grater
  • 1 Mixer
  • 1 Springform pan

Steps

  • Slice the apples and drizzle them with lemon juice.
    Grate the orange zest, peel it, and segment it.
    Beat the eggs with the sugar and orange zest until the mixture is light and fluffy.

    Add the oil in a thin stream while continuing to beat.
    Gradually mix in the sifted flour with baking powder, alternating with the orange juice.
    Use the mixer on low speed.

    Pour the mixture into a previously oiled and floured mold.
    Decorate with apple slices and orange segments.

    Bake at 350°F (180°C) for about 50 minutes in a preheated static oven.
    Perform the toothpick test, remove from the oven, and let it cool.
    Unmold and dust with powdered sugar.
