His recipe calls for 150 grams of eggs (3) + 80 grams of egg whites (3), but by mistake, I added 3 extra yolks, which did not affect the deliciousness of the cake. Steps
Preheat the oven in static mode at 356 degrees Fahrenheit. Chop the chocolate into pieces and melt it in a bowl over a water bath, stirring. In another bowl, cream the butter and add the warm melted chocolate. In yet another bowl, beat the eggs (minus 3 egg whites) with half of the sugar and add the chocolate and butter mixture.
Combine the almond flour and grated orange zest. Whip the reserved 3 egg whites to stiff peaks with the remaining sugar and fold them into the mixture using a spatula, folding from the bottom up to avoid deflating them.
Pour the batter into the buttered and floured pan, level the mixture, and bake in the preheated oven at 356 degrees Fahrenheit. Bake the Classic Caprese Cake for approximately 30-35 minutes, depending on your oven. Once cooled, sprinkle with powdered sugar and chocolate shavings.
