This I propose to you is a version of the single-serving Black Forest cake, with a syrup made from cherry juice and non-alcoholic.
The Black Forest cake is a traditional German dessert, made up of layers of cocoa sponge cake alternated with layers of whipped cream and cherries, then decorated with whipped cream, dark chocolate flakes, and candied cherries. The sponge cake is soaked with cherry liqueur. In some European regions, cherries are replaced with sour cherries.

Ingredients

  • 6 oz egg white
  • 3.5 oz egg yolk
  • 4.25 oz sugar
  • 2/3 cup flour
  • 1/4 cup unsweetened cocoa powder
  • 1 cup cup whipping cream
  • 1 vanilla bean
  • 2 tbsp powdered sugar
  • syrup cherries

Steps

  • Place the egg whites in a bowl and beat them with an electric mixer until stiff and set aside.
    Sift the flour with the cocoa.
    Beat the egg yolks with the sugar until you get a light and frothy cream.
    Add the sifted flour.
    Gradually add the beaten egg whites, mixing from bottom to top with a spatula.
    Spread the mixture on a 12×16 inch baking sheet lined with parchment paper, at a thickness of 0.4 inches.
    Bake in a preheated oven at 350°F for 10-12 minutes.
    Remove from oven and let cool.

    Detach from the parchment paper and cut 8 discs of 2.5-3 inches with the help of a pastry cutter.

  • Whip the cream with the powdered sugar and vanilla seeds.

    Soak each cocoa base disc with the cherry juice.
    Fill the first disc with cream and add some cherries.
    Close with the second disc.
    Spread a thin layer of cream around and on top of the cakes.
    Crumb the cocoa base scraps and decorate the cakes.
    On the last disc, create cream tufts and decorate with cherries.

    Cool well in the refrigerator before serving for at least 4 hours.

Tips

They keep for 3-4 days, freezing is not recommended. It is possible to freeze the sponge cake.

  • Why don’t the egg whites whip well?

    There can be various reasons, and one very important reason is the use of a container/bowl that is not plastic because it can retain traces of fat. I recommend using steel, glass, or ceramic.

  • Can I make a lactose-free Black Forest?

    Of course, using lactose-free cream with less than 0.01% lactose or vegetable cream.
