Frosted Funfetti Blondies

Blondies have a rich vanilla flavor rather than an intense chocolate taste, made with brown sugar that gives a soft and chewy texture.
The key to a perfect blondie lies in choosing the right ingredients. To achieve that perfect chewy texture, you should use brown sugar instead of granulated sugar. This not only adds flavor but also moisture to the mixture. Additionally, using soft butter and eggs helps create a dense and rich texture. Flour and vanilla extract complete the recipe.

Ingredients for Frosted Funfetti Blondies
- 1 cup cup muscovado sugar
- 1/2 cup cup butter (melted, quality)
- 1 cup cup all-purpose flour (I use Caputo pastry flour)
- 2 tsp tsp vanilla extract
- 1/2 tsp tsp fine salt
- 1/4 cup cup colored sprinkles
- 1 1/2 cups cup vanilla powdered sugar
- 2 tbsps tbsp butter (softened, quality)
- 2 tsp tsp vanilla extract
- 2 tbsps tbsp whole milk

- Electric Mixer Philips, 450 W of power
- Baking Pan 8×8 inches, also suitable for air fryer
Steps for Frosted Funfetti Blondies
Preheat the oven to 350°F and line a square non-stick baking pan with parchment paper.
Melt the butter using a double boiler.
Then, using an electric mixer, beat the melted butter and brown sugar in a bowl until smooth (about 5 minutes). Add the egg and beat until well combined. Add the vanilla extract, salt, and flour and mix until combined (max about 10 minutes total, the dough should NOT be overworked). Finally, fold in the colorful sugar sprinkles.
Pour the mixture into a parchment-lined square baking pan and bake in the preheated oven at 350°F for about 20-25 minutes (depends on your oven, but it shouldn’t be overcooked, otherwise it hardens).
Remove from the oven, unmold from the pan after 5 minutes and let it cool completely (otherwise when you pour the frosting, it will melt).
For the Frosting:
Using the electric mixer, beat the soft butter (it should be creamy) until smooth in a bowl. Add the sugar, vanilla extract, and 2 tablespoons of milk and continue to beat until smooth (about 5 minutes). Add a bit more milk or sugar if desired, depending on whether you prefer a thicker or softer consistency.
Once the cake is well cooled, cut it into squares, but leave them together and pour all the prepared vanilla frosting over, then sprinkle the colorful sprinkles on top.
Finally, gently separate the frosted squares (previously cut) and arrange them on a serving plate.
Notes and Tips
The frosted blondies keep covered at room temperature for about 6 days, but you can also freeze them with the frosting (or without) in a suitable container.
For gluten-free blondies, simply replace all-purpose flour with a gluten-free alternative.
You can add chocolate chips, nuts, or dried fruit, or a mix of these ingredients to the batter.
