Ingredients
- 1 1/4 cups pumpkin (already cooked)
- 1 3/4 cups all-purpose flour
- 1 cups yogurt (or plant-based)
- 2 eggs
- 1/4 cups brown sugar
- 1/4 cups vegetable oil (or coconut oil)
- 1 pinch salt
- 1 tsp baking powder

Steps
Mix the eggs well with the sugar, salt, and spices.
Add the pumpkin pulp, oil, and yogurt,
Blend the mixture until smooth and well combined.
Combine the flour with the baking powder and mix well.
Let it rest for 20 minutes.
Preheat the waffle griddle. Grease the griddle using a brush.
Cook about a ladleful of batter for each waffle.
Proceed in the same way until the batter is finished.
Serve with jams or marmalades, maple syrup, chocolate spread.
